Cajun Chicken & Roasted Sweet Potatoes Recipe

Ingredients

For the Cajun Chicken:

  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 1 tbsp Cajun seasoning (store-bought or homemade—see below)
  • ½ tsp salt (adjust to taste)
  • ½ tsp black pepper
  • ½ tsp smoked paprika
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp dried thyme (optional)

For the Roasted Sweet Potatoes & Bell Peppers:

  • 2 large sweet potatoes, peeled & cubed
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • ½ tsp salt
  • ½ tsp black pepper

For the Steamed Green Beans:

  • 2 cups fresh green beans, trimmed
  • 1 tsp butter or olive oil (optional)
  • Salt & pepper to taste

For the Soft-Boiled Eggs:

  • 4 large eggs

For the Spicy Honey Mustard Dip:

  • ¼ cup Dijon mustard
  • 2 tbsp honey
  • 1 tbsp mayonnaise (optional, for creaminess)
  • ½ tsp cayenne pepper (adjust for spice level)
  • ½ tsp garlic powder
  • 1 tbsp lemon juice

Instructions

Step 1: Prepare & Cook the Cajun Chicken

  1. In a small bowl, mix Cajun seasoning, salt, black pepper, smoked paprika, garlic powder, onion powder, and thyme.
  2. Coat the chicken breasts with olive oil and rub the spice mix evenly over both sides.
  3. Preheat a grill pan or outdoor grill to medium-high heat.
  4. Grill the chicken for 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C).
  5. Remove from heat, cover with foil, and let it rest for 5 minutes before slicing.

Step 2: Roast the Sweet Potatoes & Bell Peppers

  1. Preheat oven to 400°F (200°C).
  2. Toss the cubed sweet potatoes and bell pepper slices with olive oil, smoked paprika, salt, and black pepper.
  3. Spread them out on a lined baking sheet.
  4. Roast for 25-30 minutes, flipping halfway through, until the sweet potatoes are tender and slightly crispy.

Step 3: Steam the Green Beans

  1. Bring a pot of salted water to a boil.
  2. Add green beans and steam for 5 minutes, or until tender but still bright green.
  3. Drain and toss with butter or olive oil, salt, and pepper.

Step 4: Soft-Boil the Eggs

  1. Bring a small pot of water to a boil.
  2. Lower the eggs into the water and cook for 6-7 minutes for a soft-boiled center.
  3. Transfer eggs to an ice bath for 2 minutes.
  4. Peel and slice in half.

Step 5: Make the Spicy Honey Mustard Dip

  1. In a small bowl, whisk together Dijon mustard, honey, mayonnaise, cayenne, garlic powder, and lemon juice.
  2. Adjust seasoning as needed.

Step 6: Assemble & Serve

  1. Plate the grilled Cajun chicken, roasted sweet potatoes & bell peppers, steamed green beans, and soft-boiled eggs.
  2. Drizzle or serve with the spicy honey mustard dip on the side.
  3. Enjoy!

 Want extra crispy sweet potatoes? Spread them out on the baking sheet so they don’t overlap.
