Instructions
- Prepare the pesto: In a food processor, blend basil, pine nuts, garlic, lemon juice, olive oil, salt, and Parmesan (if using) until smooth.
- Toast the bread: Lightly toast the whole-grain bread until golden and crisp.
- Mash the avocado: In a bowl, mash the ripe avocado with a pinch of salt and pepper.
- Assemble the toast: Spread a generous layer of mashed avocado over the toasted bread, then drizzle or spread the pesto on top.
- Garnish & serve: Add cherry tomato halves and sprinkle with red pepper flakes for extra flavor. Serve immediately and enjoy!
Notes
- For a vegan version, omit the Parmesan cheese.
- You can substitute almonds or walnuts for pine nuts in the pesto.
