For the stir-fry:

  • 2 cups broccoli florets
  • 3 cloves garlic, minced
  • 1-inch piece ginger, grated
  • 2 tbsp vegetable oil

For the sauce:

  • 3 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp hoisin sauce
  • 1 tsp sesame oil
  • 1 tsp cornstarch
  • 1/2 cup beef broth (or water)
  • 1/2 tsp sugar

Instructions

  • Marinate the beef: In a bowl, mix the sliced beef with soy sauce, cornstarch, baking soda (if using), and oil. Let it sit for at least 15 minutes while you prep the other ingredients.

  • Prepare the sauce: In a small bowl, whisk together soy sauce, oyster sauce, hoisin sauce, sesame oil, cornstarch, beef broth, and sugar. Set aside.

  • Blanch the broccoli: Bring a pot of water to a boil and blanch the broccoli for 30 seconds. Drain and rinse with cold water to stop the cooking process. This keeps it vibrant and crisp.

  • Cook the beef: Heat 1 tbsp oil in a large pan or wok over high heat. Add the beef in a single layer and sear for about 1-2 minutes per side until browned. Remove from the pan and set aside.

  • Sauté the aromatics: In the same pan, add the remaining 1 tbsp oil. Sauté the garlic and ginger for 30 seconds until fragrant.
