Instructions

  1. In a large pot, brown the ground beef over medium heat. Drain excess fat.
  2. Add diced onions and potatoes, cooking until softened.
  3. Pour in beef broth and bring to a simmer.
  4. Mix in milk, sour cream, and shredded cheese until melted and creamy.
  5. Season with salt and pepper to taste.
  6. Serve hot, garnishing with crumbled bacon and pickles if desired.

Notes

For extra flavor, top with a swirl of mustard or ketchup before serving. This soup can be made ahead and frozen for later use.
