Instructions
- In a large pot, brown the ground beef over medium heat. Drain excess fat.
- Add diced onions and potatoes, cooking until softened.
- Pour in beef broth and bring to a simmer.
- Mix in milk, sour cream, and shredded cheese until melted and creamy.
- Season with salt and pepper to taste.
- Serve hot, garnishing with crumbled bacon and pickles if desired.
Notes
For extra flavor, top with a swirl of mustard or ketchup before serving. This soup can be made ahead and frozen for later use.
