Instructions

  • Toast the bread: Toast the whole-grain bread slices until golden and crispy.
  • Prepare the avocado: In a small bowl, mash the avocado with lemon juice, salt, and black pepper. Set aside.
  • Scramble the eggs: In a bowl, whisk the eggs with milk, salt, and black pepper.
  • Cook the eggs: Heat butter (or olive oil) in a pan over medium-low heat. Pour in the eggs and gently stir with a spatula until soft and slightly runny. Remove from heat as they will continue to cook.
  • Assemble the toast: Spread the mashed avocado evenly on each toast slice, then top with scrambled eggs.

 

  • Garnish & serve: Sprinkle with red pepper flakes and chopped chives. Serve immediately!

Notes

  • For extra flavor, add a sprinkle of feta cheese or everything bagel seasoning.
