- 2 slices whole-grain bread
- 1 ripe avocado, mashed
- 2 large eggs

- 1 tablespoon butter (or olive oil for dairy-free)
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- 1 teaspoon lemon juice
- 1 tablespoon chopped fresh chives (optional)
Instructions
- Toast the bread: Toast the whole-grain bread slices until golden and crispy.
- Prepare the avocado: In a small bowl, mash the avocado with lemon juice, salt, and black pepper. Set aside.
- Scramble the eggs: In a bowl, whisk the eggs with milk, salt, and black pepper.
- Cook the eggs: Heat butter (or olive oil) in a pan over medium-low heat. Pour in the eggs and gently stir with a spatula until soft and slightly runny. Remove from heat as they will continue to cook.
- Assemble the toast: Spread the mashed avocado evenly on each toast slice, then top with scrambled eggs.
- Garnish & serve: Sprinkle with red pepper flakes and chopped chives. Serve immediately!
Notes
- For extra flavor, add a sprinkle of feta cheese or everything bagel seasoning.
- If you like it spicy, drizzle with hot sauce or Sriracha.
