- 1 lb ground beef
- 1 onion, chopped
- 2 carrots, chopped
- 2 potatoes, diced
- 4 cups beef or chicken broth
- 1 can diced tomatoes
- 1 tsp dried oregano
- 1 tsp dried basil
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions
- Brown the ground beef in a large pot, breaking it up with a wooden spoon.
- Add chopped onions, carrots, and diced potatoes. Sizzle until softened.
- Pour in the broth and canned tomatoes and season with herbs.
- Let it simmer for about 30 minutes, stirring occasionally.
- Adjust seasoning and serve hot.
Notes
Add fresh herbs or shredded cheese for extra flavor. Leftovers taste even better the next day!
