Instructions
- Preheat oven to 425°F (220°C). Arrange tater tots on a baking sheet and bake according to package instructions until crispy.
- Cook breakfast sausage in a large skillet over medium heat until browned. Remove sausage and set aside, leaving drippings in the pan.
- Make the gravy: Add butter to the skillet, then stir in flour, cooking for 1 minute until lightly golden. Gradually whisk in milk, stirring constantly until thickened. Add salt, pepper, garlic powder, and onion powder. Return cooked sausage to the skillet and stir to combine.
- Scramble the eggs: In a separate pan, cook scrambled eggs to your desired consistency.
- Assemble: Divide crispy tater tots into bowls. Top with scrambled eggs, sausage gravy, and shredded cheddar cheese.
- Garnish with sliced green onions and serve immediately.
Notes
- For a spicier version, use hot sausage and add a pinch of cayenne to the gravy.
- Swap out cheddar for pepper jack or mozzarella for a different cheese flavor.
